Kale and Chard Greek Salad

 2 tsp. honey

1/2 cup cider vinegar

1/2 tsp salt

1/2 tsp ground black pepper

1/2 tsp oregano (optional)

1/2 cup olive oil

1 bunch kale, (remove stems and ribs if tough)

1 bunch Swiss chard, torn into pieces (Stems are typically used but chopped separately)

1 pound chicken breast, diced (I use leftover grilled, fried or roasted chicken)

1 (6 ounce) container crumbled feta cheese

1/3 cup raisins (can use chopped apples or other dried fruit or if you prefer salty to sweet, add black olives)

1/3 cup chopped walnuts or sunflower seeds

Whisk the vinegar, honey, salt, pepper, and oregano until the honey has dissolved. Whisk in the olive oil until blended. Place the kale, Swiss chard, chicken, feta cheese, raisins, and walnuts into a bowl. Toss with the dressing to serve.
