Apple and Cabbage Slaw

  • 1/2 large head cabbage, or 1 small head (red or green)
  • 2 medium carrots
  • 2 apples
  • 1 Tbs. minced parsley or cilantro
  • 1 Tbs. mustard
  • 3 Tbs. olive oil
  • 1 Tbs. apple cider vinegar
  • 2 tsp. honey
  • salt and pepper to taste

With a food processor or by hand, grate cabbage, carrots, and apples. Combine in a large bowl with the minced parsley. Whisk remaining ingredients together, then add to the veggie mixture and toss to coat. Taste and adjust seasonings.

Other veggies that work beautifully in this slaw: celeriac, kohlrabi, beets, daikon radish, watermelon radish

Tasty additions to this slaw: chopped and toasted nuts, raisins, horseradish or chili sauce
