Apple Kale Salad II

7 oz fresh green kale (ribs and stem removed if tough)

2 apples, chopped

½ cup red onion, chopped

1 ½ cup pecans

½ cup dried raisins, cherries, or fruit of your choice    


¼ cup rice vinegar

2 T. apple juice concentrate

4 T. maple syrup

1 T. red onion, minced

salt and pepper to taste

½ cup olive oil

¼ cup whipping cream  

Combine first six dressing ingredients in a blender and blend until smooth.  Whisk in olive oil and cream until smooth and emulsified.  Set aside.  Chop the kale, apples, and red onion.  Place all chopped salad ingredients into a large mixing bowl and dress just before serving.
