How to Make Zucchini Noodles

1.      Slice off one end of the zucchini so that you have a flat surface to place on your counter. Use a vegetable peeler to peel off the dark green skin.

2.      Pass vegetable peeler over the zucchini lengthwise to produce long, flat noodles. When you get to seeds, turn the zucchini and begin slicing another side.

3.      Preheat the oven to 200 F. Line baking sheet with paper towels.

4.      Arrange your noodles on the baking sheet in a flat single layer. You may need multiple baking sheets. Sprinkle with salt.

5.      Place the noodles in the oven and bake them for 30 minutes, or until the majority of the moisture inside the noodles has “sweated” out.

6.      Add noodles to pot of boiling water and boil for 2-5 minutes. Drain the zucchini noodles using a colander. Let stand for 5 minutes
